Richard guides guests through four standout examples: the textured intensity of old‑vine Chenin Blanc, the surprising depth of old‑vine Sauvignon Blanc, the lifted aromatics and fine, supple structure of old‑vine Cinsault, and finally the deep, resonant character of old‑vine Pinotage, a variety that reaches its most elegant expression when drawn from mature, low‑yielding vines.
