Rudi Schultz comes from a family thick with winemakers; three of his brothers make wine too. His own label is a personal project run alongside his role as cellarmaster at Thelema, with each cuvee named after a surf break he knows well. The wines are made in small quantities and with obvious care, and this Chardonnay is the range’s most polished white.
This is a site-driven Chardonnay grown close to the ocean, where the steady South-Easterly wind is central to its shape. By cooling the vines, those breezes slow ripening and keep the natural acidity high, here around seven grams per litre. Granite soils over a clay-rich sub-soil add mineral depth and structure. The intent is clear: a lean, elegant, distinctly Stellenbosch white rather than a rich, tropical style.
The 2025 vintage has been widely praised in the Cape, and it suits this style well. A wet, late-starting winter with record rainfall was followed by a mild, even growing season, so the fruit ripened slowly and steadily. Cool, stable weather through ripening protected acidity and built flavour, which is exactly what Chardonnay needs. Early-ripening whites also bounced back after a frost-hit 2024.
Expect a restrained, cool-climate nose of lemon, green apple, white blossom and a chalky, mineral note, with oak kept in the background. The palate is lean and precise, its citrus and orchard fruit carried by taut, mineral acidity and a fine, saline finish. It is more about tension than weight. Lovely on release, it should gain depth over three to four years. Serve lightly chilled with white fish or roast chicken.
This sits at the top of the range and carries a premium price to match, reflecting the tiny volumes and the quality of the site. In style it leans towards a cool-climate Chablis or a fine Cape Chardonnay rather than a buttery, oak-driven one, and it pays to serve it in a decent glass. It is a white for a good dinner or a wine lover who values restraint. Elegant, and quietly confident.
