Ridgeback Cabernet Franc 2020 Paarl, Western Cape, South Africa 75cl

Cabernet Franc is a Ridgeback signature, and this is the estate’s varietal expression of it from the fine 2020 vintage. On the northern slopes of Paarl, among conserved fynbos, the estate has built a quiet reputation for a grape most Cape producers only ever blend.

Made entirely from Cabernet Franc, the fruit is handled to bring out the variety’s savoury, herbal character rather than to build weight. Whole berry fermentation and around fifteen months in French oak add depth and gentle spice. It is the more earthy, savoury foil to the estate’s Cabernet Sauvignon, and a wine of real personality.

2020 was a fine, generous year across Paarl, widely remembered as one of the Cape’s best of recent times. A windy flowering concentrated the berries, and a moderate, even ripening kept freshness alongside the ripeness. For an aromatic, structured red like this, it gave both perfume and grip.

Dark plum sits alongside pencil shavings and dried herbs, with the classic Cabernet Franc lift of green peppercorn and black olive. Ripe tannins and gentle oak spice carry a long, mineral finish. It is savoury and detailed rather than showy. Drinking well now, it will keep for several years. Serve it with duck, roast veal or mushroom based dishes that echo its earthy side.
