Piper-Heidsieck has made Champagne in Reims since 1785, a house long associated with bright, precise, aperitif-style fizz. Its vintage wines appear only in years the cellar judges worth marking, and 2008 is exactly such a year.

This cuvée is a near even blend of the two great Champagne grapes, roughly 52% Chardonnay and 48% Pinot Noir, drawn from around twenty villages across the region, many of them grand and premier cru. A modest dosage of about nine grams per litre leaves the wine dry and lets the fruit and the chalk do the talking.

2008 is one of the most admired Champagne vintages of its era. A cool, classic season gave grapes with high natural acidity and real ripeness, the combination that builds Champagnes with tension in youth and the structure to age gracefully for many years.

On the palate it is pure, lean and delicate yet complex, with citrus and orchard fruit, notes of brioche and toasted almond from time on the lees, and a mineral, chalky thread that runs right through. The mousse is fine and persistent and the finish long and finessed. Serve it well chilled, around eight degrees, as an aperitif or with delicate seafood such as oysters, langoustines or a plate of smoked salmon.
