Pere Ventura is a family Cava house based in Sant Sadurní d’Anoia, the Penedès town in Catalonia that sits at the centre of Spain’s traditional-method sparkling wine trade.

The Tresor Brut Reserva is a blend of the three classic Cava grapes: Macabeo for freshness and apple fruit, Parellada for delicacy and floral lift, and Xarel·lo for body and structure. Like Champagne, it is made by the traditional method, with a second fermentation in the same bottle you buy, which is what creates the fine, natural bubble.

As a 2017 Reserva, it has spent well over a year maturing on its lees, the spent yeast from that second fermentation. Every Cava must rest at least nine months on its lees before sale, and a Reserva at least fifteen, so that extended contact is what builds the persistent mousse and the subtle bready, biscuit character that lifts it above simpler, quicker fizz.

It is dry and fresh, with green apple, pear and citrus fruit, a soft toasty note and a clean, crisp, refreshing finish. It works beautifully on its own as an aperitif, and its acidity and low dosage make it a natural partner for seafood, oysters, sushi, tapas, fried starters and salty snacks.
