Domaine de Sainte Rose is a family-run boutique estate in the hills near Servian in the Languedoc, west of Beziers, where the owners left other careers behind to make characterful, easy-drinking wines under the warm southern sun.

The Coquille d’Oc Blanc brings four grapes together, Chardonnay for weight, Viognier for floral lift, Sauvignon Blanc for zest and Muscat for aromatic charm. The name nods to the scallop shell carved on the stone basin outside the chateau, once a sign of shelter for passing pilgrims. Fruit is picked in the cool of the early morning and fermented gently in temperature-controlled stainless steel to keep those aromatics fresh.

The 2015 season across the Languedoc was warm and generous, giving ripe, rounded whites with plenty of flesh, and this blend carries that fuller style while holding on to its lift and freshness.
