Aleavini ‘Can Xa’ Cava Brut NV Penedès, Cava, Spain 75cl

Aleavini is the Cava label of Invisus Wines, working in Penedès, the Catalan heartland where Spain’s traditional-method sparkling wine first took hold in the nineteenth century. Can Xa is their everyday Brut, made for easy enjoyment rather than ceremony, and priced to be opened often.

The blend brings together the three classic Cava grapes. Macabeo gives freshness and apple fruit, Parellada lends delicacy and floral lift, and Xarello supplies structure and backbone. It is made by the traditional method, with the second fermentation happening in the bottle and a spell resting on the lees to build texture and a fine, persistent bead.

As a non-vintage cuvée, Can Xa is blended for consistency, so the house style holds steady from one release to the next: dry, bright and uncomplicated, without the weight or biscuity depth of long bottle age.

In the glass it is pale and lively, the bubbles rising in a slow, even stream. Expect green apple and fresh citrus, a subtle bready hint from the lees, and a clean, crisp finish. The mousse is soft and persistent, keeping every sip refreshing, and the low dosage keeps it firmly on the dry side.

This is a friendly, well-priced way into traditional-method Cava. Serve it well chilled, around six to eight degrees, as an aperitif, with salted almonds, jamón or fried seafood, or wherever you want bubbles without fuss. If you enjoy a dry Prosecco or a straightforward Champagne-style Brut, this is a natural step towards the more savoury character of good Spanish fizz. Keep a bottle cold for a Friday evening as readily as for a toast.
