Aaldering Estate Chardonnay 2025 Devon Valley, Stellenbosch, Western Cape, South Africa 75cl

Aaldering sits in Devon Valley, a cooler pocket of Stellenbosch better known for reds, which makes its whites all the more interesting. The family estate works a compact patch of granite soils and keeps winemaking gentle under Jaco Parson. The Chardonnay is where its cooler-site character comes through most clearly.

The grapes come from a block planted in 2008, southwest-facing on decomposed granite. In the house style the wine is fermented and matured in French oak, a portion of it new, and left on the lees to build a creamy weight, with malolactic softening the acidity. The oak is there to frame the fruit, not dominate it.

2025 was an eventful season in the Cape. A cold, wet winter and moderate spring gave way to summer heatwaves that pulled harvest forward. Hot days and cool nights helped whites keep their acidity while building ripeness and flavour. The estate calls it a tricky vintage that produced wines of real character.

Expect ripe orchard and citrus fruit on the nose, with exotic nuances and a bright, refreshing lift. The palate is medium-bodied and creamy, its texture built by lees ageing and French barrels, carrying juicy fruit and a subtle honeyed note. Vibrant acidity keeps it fresh. Serve cool at 10 to 12 degrees.

In the glass it leans towards a rounded, food-friendly white, richer than an unoaked Chardonnay but a long way from heavy. It flatters seared salmon or tuna, roast chicken and creamy pasta. A dependable choice when you want something with a bit of substance for a weekend meal or dinner with friends.
